<p>Selecting a bottle of wine to have with your food depends on what type of meal you are having Typically fish and chicken is better served with a nice white wine. There are exceptions of course. <p>The most important thing to be aware of when preparing a meal is that the wine and food should complement eachother. Try to avoid having the food or drink offending each other. If you would like to serve a few different wines at a meal, remember these important steps: </p>
<p>1) Serve dryer wines before sweeter ones.<br />2) Allow your diners to enjoy a lighter before a full bodies one such as a Bordeaux.<br />3) It&#8217;s a good idea to serve the highest alcohol content wines at the end of the meal, so that the food will absorb more the alcohol making your guests feel less tipsy</p>
<p>Your food and drink choices should be running like a piece of music . This is the reason behind most restaurants beginning with an amouse bouche then a first course and ending with a sweet course. The most sweet part of the meal. Follow this rule for your wine, and you will have a good time. Start off with a  wine to wake the taste buds up and then go up from there. Pudding can be served with a sweet wine or drink, however sweet wine is again an aquired taste. </p>
<p>Failing to plan is planning the fail! The essential step to hosting a sucessful dinner party is to have a trial run a week or so before. Trial your food and wine ideas with your partner or a close acquaintance to find out what works most sucessfully. When you have your dinner party, you can feel satisfied knowing that the food and wine matched well. As you begin to replay the evening’s delicacies in your mind you are suddenly interrupted. In front of you is placed the piece de resistance, a perfectly chilled, shimmering glass of Sauterne and a thinly sliced wafer of foie gras.</p>
<p>For many gourmets this single course would be the showstopper, the best of the entire evening. It perfectly embodies the play of sweet and savory that works so well with a dessert wine and a meat.</p>
<p>Dessert wines are an essential niche of the wine making industry but they are not as common as the reds, the whites, and the sparkling wines. And, they go by several different names. In England they are sometimes termed pudding wines and in Australia a dessert wine may be called a stickie.</p>
<p>A Wine By Any Other Name</p>
<p>As there is no single name for a dessert wine, there is no single definition for dessert wines. There are several differing theories on what is and is not a dessert wine depending on where you are in the world. England seems to have the most complicated rules for determining a dessert wine’s status.</p>
<p>To qualify a wine must be sweet but must not be a white fortified sherry drunk before a meal or a red fortified port or Madeira drunk after a meal. A dessert wine in England can only be consumed during the meal.</p>
<p>In the United States the terms are more understandable but more rigid. There is a legal definition for dessert wine which states that any wine with more than 14 percent alcohol by volume is a desert wine.</p>
<p>Dessert wines are known for their high levels of sugar and their sweet taste. There are several different<br />ways winemakers add sugar during the winemaking process. Some choose to harvest grapes with high sugar content so the sugar is added to the mix naturally. Others choose to add sweetness to their mixture after crushing but before fermentation.</p>
<p>Sussreserve</p>
<p>In Germany dessert wines are submitted to a unique process that is hundreds of years old called Sussreserve. After a wine has completely fermented, must or grape juice, is added. This adds a measure of sweetness to the mixture and lowers the final alcohol content.</p>
<p>There are several reasons for the success of Sussreserve. First and foremost it produces an excellent and smooth dessert wine. It also dilutes the wine to acceptable German standards, no more than 15 percent alcohol by volume. For the winemaker the fermenting process is less complicated because he does not have to stop the process before all the sugars are gone. The success of Sussreserve has made the technique popular in New Zealand and other parts of the world.</p>
<p>Fortified wines are created when the winemaker adds brandy before all the natural sugars in the grapes have fermentated. The vintner’s term for intermingling different wines is mutage. Fortified wines include sweet Sherries such as Pedro Ximenez and Bristol Cream.</p>
<p>A Perfect Pair</p>
<p>A general rule in world of wine and food is that the wine you drink must never be sweeter than the food you eat. This can sometimes be difficult depending on the pairings or tasting menu you are offered. And, there are times, such as with the foie gras and Sauternes that you will gladly throw tradition to the wind.</p>
<p>The perfect pairing, says traditional wine lore, is a juicy and ripe peach with any dessert wine. The soft flesh of the peach is both sweet and tart, and excellent foil for the sweetness of the dessert wine. In Italy a traditional dessert pairs bitter almond cookies with a classic dessert wine, Vin Santo. The cookies are served on a plate around the wine glass for dipping in the wine.</p>
<p>As with all wines it is important to choose your own favorites. Purchase several recommended bottles and try pairing them at home with different foods. Bon Appétit!</p>

They often do not realize that most wine undergoes chemical analysis as well as a variety of tests in <a target="_blank" rel="nofollow" href="http://cigar-humidor-sale.com/goto/http://www.cigar.com/click.asp?a=89727&l=116" rel="nofllow" target="_blank" title="order" >order</a> to pour out of the bottle the way the winemaker intended. During the winemaking process, a wine may have had a number of additives put into it. Although this does not cover every one of them, we&#8217;ll take a look at some of the more common ones:</p>
<p><strong>Yeast</strong></p>
<p>Yeast of course is what actually does the work of turning juice into wine. There are many different yeast strains, and often a winemaker will choose the particular strain for the qualities it will create in the finished product. Yeast selection may also be determined by the environment the wine is being made in. Some yeast strains tolerate different temperatures.</p>
<p><strong>Yeast Nutrient</strong></p>
<p>Often, a juice may not have all of the necessary nutrients to ensure good yeast reproduction, so a nutrient consisting of some vitamins and minerals may be added to ensure healthy yeast.</p>
<p><strong>Pectic Enzyme</strong></p>
<p>Almost all fruit contains some amount of pectin, which if not treated could cause a haze in wine. Pectic enzyme breaks down pectin and can help to extract flavor and juice from the fruit.</p>
<p><strong>Potassium Metabisulfite (K-Meta)</strong></p>
<p>Some people believe that sulfite in wine causes headaches, however sulfites are a common food preservative, and it is likely that it has been added at one or more stages of the wine making process. When the grapes are first picked, sulfite may have been sprinkled over the grapes to inhibit wild yeast and bacterial growth. It is often used in juices before they have been inoculated with yeast, and are almost always added when the fermentation has completed.</p>
<p>As well as inhibiting bacteria growth, sulfite helps protect against oxidation.</p>
<p><strong>Sodium Metabisulfite</strong></p>
<p>Although not as common today, sodium metabisulfite can be used in the same method as potassium metabisulfite. It is more commonly available in the form of &#8220;Campden Tablets.&#8221; However, due to health concerns of those on sodium restricted diets and the fact that K-Meta is slightly more effective, this form of sulfite is used much less as an additive but is still used to make sanitizing solutions.</p>
<p><strong>Potassium Sorbate</strong></p>
<p>Potassium sorbate is often used in conjunction with K-Meta to stabilize wine. It inhibits yeast from reproducing, thereby preventing any yeast cells that remain after fermentation to begin a new fermentation using residual sugar or sugar added to sweeten.</p>
<p><strong>Clarifying (Fining) Additives</strong></p>
<p>When wine is first made, it is very cloudy with yeast and other particles in suspension. Beginning <a target="_blank" rel="nofollow" href="http://cigar-humidor-sale.com/goto/http://homewinery.info" rel="nofollow" target="_blank" >home winemakers</a> are often quite surprised and shocked at the appearance of wine when it first begins to ferment.</p>
<p>Often, these particles won&#8217;t quickly drop out of the wine as sediment, so clarifying additives are used to speed or help the clarification process. Particles in suspension have either a negative or positive charge, therefore clarifying agents have an opposite charge in <a target="_blank" rel="nofollow" href="http://cigar-humidor-sale.com/goto/http://www.cigar.com/click.asp?a=89727&l=116" rel="nofllow" target="_blank" title="order" >order</a> to attract the particles and help them along on their way to the bottom of the wine vessel to become sediment.</p>
<p>Common clarifying additives include:</p>
<ul>
<li> Bentonite &#8211; a clay made of volcanic ash. Negatively charged and attracts positive charged matter.</li>
<li> Isinglass &#8211; made from the air bladder of some fish, most notably sturgeon, cod and cichlids. It is a fairly benign clarifier as it does not strip flavors and colors as much as others might. Positively charged and attracts negative charged particles.</li>
<li> Kieselsol &#8211; a negatively charged silica gel and used in both white and red wines. Very common in wine kits.</li>
<li> Chitosan &#8211; often used in conjunction with kieselsol, cheitosan is positively charged. Made from the exoskeleton of crustaceans like crabs and shrimp. (Those who have a shellfish allergy need not be worried &#8211; allergies are due to proteins in the shellfish organism &#8211; not the exoskeleton).</li>
<li> Casein &#8211; a derivative of milk and is used to reduce tannins in some wines.</li>
<li> Gelatin &#8211; not recommended for white wines, but sometimes used in reds to reduce tannin.</li>
</ul>
<p>Remember that fining agents are added to clarify wines. Therefore, there is very little trace, if any, left in the wine after they have done their job.</p>
<p><strong>Bacteria</strong></p>
<p>In some wines, the presence of malic acid is not desirable, therefore the winemaker may add lactic acid bacteria in <a target="_blank" rel="nofollow" href="http://cigar-humidor-sale.com/goto/http://www.cigar.com/click.asp?a=89727&l=116" rel="nofllow" target="_blank" title="order" >order</a> to have the wine undergo a malolactic fermentation. This causes the malic acid to become lactic acid, providing a smoother &#8220;mouthfeel.&#8221;</p>
<p><strong>Sugar</strong></p>
<p>While some sweet wines have been fermented with yeast that cannot tolerate higher alcohol percent which means the fermentation will stop with some residual sugar left over, other wines are fermented completely and then later sweetened with some type of sugar.</p>
<p>Now you know some of the more common additives used in the <a target="_blank" rel="nofollow" href="http://cigar-humidor-sale.com/goto/http://homewinery.info" rel="nofollow" target="_blank" >wine making</a> process. 			<content:encoded><![CDATA[<!-- google_ad_section_start --><p>Every single wine kit that I&#8217;ve ever purchased comes with a package of potassium sorbate. The instructions that come with the wine kits tell us to add sorbate at the same time that we are to add potassium metabisulfite. However, many winemakers balk at adding sorbate to their wine and don&#8217;t always follow instructions.</p>
<p>Why the balking? Many believe that potassium sorbate adds a bubblegum flavor to wine, or as some call it, &#8220;kit wine taste.&#8221; So why do so many advise to add this stuff to our wines after the fermentation has been completed?</p>
<p>Well, let&#8217;s bust one common myth right at the outset. Potassium sorbate does not kill yeast. Many believe that the purpose of this additive is to kill yeast. What sorbate does, at the correct quantity, is slow down and stop the reproduction of yeast. It will not stop yeast from continuing to ferment a wine, nor will it prevent a fermentation when it&#8217;s added to juice before the juice has been inoculated with yeast.</p>
<p>Primarily, it is used to prevent a re-fermentation of the wine if there is enough residual sugar left in the wine after it has been bottled or if a wine has been sweetened after it has fermented. You may have heard stories &#8211; or perhaps it&#8217;s happened to you, where a home winemaker has bottled their wine, only to start hearing corks popping out of the bottles six months later. This is because there was enough sugar in the wine for some yeast cells to feed on and begin reproducing. As they feed on the remaining sugar, the produce more alcohol and carbon dioxide. The carbon dioxide build up in the bottles creates enough pressure that the corks are forced out of the bottles and the wine inside blasts out.</p>
<p>Dry wines that have fermented to very little or zero residual sugar and that will be bottled without a sugar based sweetener added do not need any additions of potassium sorbate. If there is no sugar for any remaining yeast cells, there will be no re-fermentation by yeast.</p>
<p>If the winemaker is making an off-dry or sweet wine, potassium sorbate should be added to the wine to stabilize it. Generally, the rate of 1/2 teaspoon per gallon is the rule of thumb.</p>
<p>If you&#8217;re new to <a target="_blank" rel="nofollow" href="http://cigar-humidor-sale.com/goto/http://homewinery.info" rel="nofollow" target="_blank" >home winemaking</a>, I&#8217;d recommend that you use the potassium sorbate additive in your wine until you are very comfortable using a <a target="_blank" rel="nofollow" href="http://cigar-humidor-sale.com/goto/http://homewinery.info/glossary/glossary.php?q_id=34" rel="nofollow" target="_blank" >hydrometer </a>to measure the specific gravity and understand the relationship of sugar and yeast. Wine kit makers don&#8217;t want to take any chances that you may not have fermented your dry wine completely, and therefore instruct that you add sorbate at the same time as sulfite. Potassium sorbate is more effective when used in conjunction with potassium sorbate.</p>
<p>      <span style="font-size:100%;font-style:italic">
